When Life Gives You A Pig…Make Sausage!

Fresh Homemade Sausage

1 pig or hog*

Coooold weather

Legg’s Old Plantation Pork Sausage Seasoning #10 -8 oz. bag seasons 25 lbs. of meat, price is about $2.50 per package (or your own sausage recipe)

Butcher the pig

Cut your meat up, add extra fat (anywhere from 5 to 8 parts meat/1 part fat )*

Grind the meat and fat together

Add seasoning –add extra red pepper if you like it hot/more sage if you like it sagier

Mix, mix, mix and mix some more

Fry a test piece

Adjust fat and seasoning if necessary

Eat –yum!

Freeze or can.

Canned Sausage

Fry sausage in balls

Pack in hot pint jars

Pour grease over sausage (divide evenly between each jar –should be about an inch of grease in each)

Put lids on the jars and turn upside down

Let cool completely and store in cool place

 

*Note: A hog is just a BIG pig! :)

Cow Patties (No-Bake Cookies)

We got our cookies made for the bake sale tomorrow.

Cow patty cookies

We made four batches of what Lacy calls Cow Patties (Chocolate No-Bake Cookies) –of course one of those batches is for us!

Here’s my recipe –adapted from my momma’s:

Cow Patties ( Chocolate No-Bake Cookies)

  • 2 cups sugar
  • 4 Tablespoons cocoa
  • 1/4 teaspoon salt
  • 1/2 stick butter, softened (real butter)
  • 1/2 cup milk (whole milk)
  • 3/4 teaspoon vanilla extract (the real stuff)
  • 1/2 cup peanut butter (JIF)
  • 2 1/3 cups old-fashioned oats (you can use quick oats, but the texture comes out different)

Mix the sugar, cocoa and salt in a 2 quart saucepan. Stir in butter and milk. Bring to a rolling boil and  boil for 1 1/2 minutes, stirring constantly. Remove from heat, stir in vanilla and peanut butter till blended, stir in oats. Drop by spoonfuls onto wax paper, let cool to harden. Eat.

Fried Cabbage

Need another way to fix cabbage?

My husband doesn’t eat many vegetables (he’s a “meat and taters” man) and he never liked cabbage…until we got married and he tried my fried cabbage!

Fried Cabbage

Cabbage
Bacon Grease/Oil
Salt
Pepper
Celery seed
Fresh garlic

Put enough grease in your skillet to cover the bottom of the pan and put on medium to medium-low heat.

Chop enough cabbage to fill your pan, and then some (mound it up above the sides, the cabbage will shrink as it cooks); it usually takes about 3/4 of a head for a 10 in. skillet.

Drizzle with a little more grease (or oil), cover and let it cook a while until it starts wilting.

Turn it a time or two, until all the cabbage is soft; then sprinkle with salt, pepper and celery seed (about 1/2 tsp. each).

Keep turning until the cabbage is as done as you like it, add fresh chopped garlic during the last 5-10 min.

Notes:

  • You can use any oil you like in place of the bacon grease, but the bacon grease gives it a better flavor –sometimes I use a combination of bacon grease and olive oil.
  • I don’t measure a whole lot when I’m cooking, so the measurements are approximations.
  • If it’s too spicy, use less pepper and garlic.
  • This takes about 45 minutes to an hour to cook, depending on how done you like it –we like ours fried ‘til it’s brown.
