Mushrooms In The Mountains

Here are some photos of mushrooms we found this month; I tried to identify them, but most of them weren’t in my book –it’s time for a better field guide! 

Mushroom family

These were growing in clumps on a downed oak tree.

 

Little Red Mushrooms 

These are  1 to 1 1/2 inches tall, coming up through moss -they were the only two that we saw.

 

Shelf Mushroom

Possibly –Coriolus Versicolor (bracket fungus, Turkey Tail)

This one was on a chunk of either cherry or oak.

 

Toadstool 

We found several of these, here and there, in our turn-around.

 

Bowl Mushrooms

Daniel called these “bowl mushrooms”, also growing on dead wood.

 

Mini Mushrooms

Possibly –A species of Mycena (Elf Cap)

We have several colonies of these tiny mushrooms, they come up around old oak stumps.

 

Little Yellow Mushrooms

Hygrocybe nitida

We found these on a dry mountainside, just below a wild blueberry patch.

Citizen Science Days In The Great Smoky Mountains

On June 29 and July 2 you can become a “Citizen Scientist” and join Great Smoky Mountains National Park researchers and educators in collecting scientific data in the park.

Special High School Volunteer Day

Monday, June 29: Mapping in a Maze of Grass -10:00 am to 2:00 pm

This project will include collecting data, mapping evidence, and treating fire ant mounds. Open only to high school students and recent graduates.

Special Public Volunteer Day

Thursday, July 2: Filling in the Gaps on the Map -9:00 am to 12:00 pm

Participants will spend the day exploring the trails between the Twin Creeks Science and Education Center and Sugarlands Visitor Center and map the big trees along the way. Open to the public of any age (for those 12 years of age or younger, a parent is required to be present). Limited to 20 people, reservations required.

Fried Cabbage

Need another way to fix cabbage?

My husband doesn’t eat many vegetables (he’s a “meat and taters” man) and he never liked cabbage…until we got married and he tried my fried cabbage!

Fried Cabbage

Cabbage
Bacon Grease/Oil
Salt
Pepper
Celery seed
Fresh garlic

Put enough grease in your skillet to cover the bottom of the pan and put on medium to medium-low heat.

Chop enough cabbage to fill your pan, and then some (mound it up above the sides, the cabbage will shrink as it cooks); it usually takes about 3/4 of a head for a 10 in. skillet.

Drizzle with a little more grease (or oil), cover and let it cook a while until it starts wilting.

Turn it a time or two, until all the cabbage is soft; then sprinkle with salt, pepper and celery seed (about 1/2 tsp. each).

Keep turning until the cabbage is as done as you like it, add fresh chopped garlic during the last 5-10 min.

Notes:

  • You can use any oil you like in place of the bacon grease, but the bacon grease gives it a better flavor –sometimes I use a combination of bacon grease and olive oil.
  • I don’t measure a whole lot when I’m cooking, so the measurements are approximations.
  • If it’s too spicy, use less pepper and garlic.
  • This takes about 45 minutes to an hour to cook, depending on how done you like it –we like ours fried ‘til it’s brown.

Lightning Can Go Through The Phone Lines And Wal-Mart Doesn’t Sell Dial-up Modems

That just about says it all, doesn’t it. :)

All of our electronics and appliances are plugged into surge protector strips, so I thought everything was protected from electric surges and lightning strikes –wrong!

During one of last week’s storms, lightning went through our telephone line and fried the modem on my computer! I had no idea it could do that!

Well. I guess I’m way behind times; I have since found out that they make surge protectors with a phone line plug-in –I even found one at Wal-Mart.

Wal-Mart doesn’t have everything, though. I had to go to four different places to find a modem; Circuit City is closed down and neither the Wal-Mart or the Office Depot in our area carries them.

I finally found one at Staples for $45 -the last one they had in stock! Thank you Mr. Zach at the Maryville Staples store. :)

I’m all hooked back up, but now I have over 3000 e-mails to go through…aaack!

I’ll have to get me one of those “round tuits”. :)

Some Wee Wildlife Of The Holler

These are some little critters we ran across yesterday.

Baby Spiders –a whole nest of them on one of my blueberry bushes.

Snake small

Sssssneaky Snake –hiding in a small tree about 2 feet off the ground.

Toads and spiders and snakes…oh my! :)

When Life Gives You Cabbage…Make Kraut!

Did you grow a lot of cabbage this year and don’t know what to do with it all?

Here is a simple recipe for kraut (sauerkraut), from my sister-in-law, Aunt Susie.

Canned Kraut

Chop up your cabbage.

Pack in quart jars –not too tight.

Fill each jar with hot water (Aunt Susie just uses hot water from the tap).

Add 2 tsp. salt, 1 tsp. sugar and 1 tsp. vinegar to each jar.

Put the lids on and set in a cool, dark place for 9 days.

Store in your cupboard.

Aunt Susie said, “You’re supposed to wait 21 days before you eat the kraut, but we never do, and it’s best to make kraut when the signs are in upper part of the body –in the head is best. Don’t never make kraut when the signs are in the bowels.”

Please note: This recipe doesn’t call for a boiling water bath but the USDA does recommend one.

Still Weed Eating

We don’t have a lot of yard here in the holler and what we do have is very rocky -so instead of mowing, we weed-eat.

It usually takes a good 10 hours to weed-eat our place and another 20 hours to do the roads.

Not this year!

I’ve been weed-eating every morning for a couple hours, until it gets too hot, but every afternoon it has rained or stormed and the weeds are growing almost as fast as I cut them down!

So…I’m still weed-eating, but I don’t mind; at least we’re not in a drought anymore, our spring and creek are running good, and the garden is doing great -thank the good Lord!

I’ll be back later with a recipe for some of your garden’s harvest, some pictures of wee wildlife in the holler and some freebie links.

Now I’m off to weed-eat some more…maybe, it’s looks like it might rain…again! :)
